Cook With Me - Prawn Stirfry

Hello everyone! Today I really wanted to put up a completely different type of post and share with you a recipe. Recently I've been engaging with cooking a lot more, and although I'm not in any way claiming to be some kind of expert, I'm absolutely loving learning more about this - so I wanted to share with you a quick and easy prawn stir fry recipe. If you're a student like me, or even just if you have a pretty hectic schedule; you'll appreciate finding quick and easy recipes - so let's get cooking!

The ingredients:
One courgette
Frozen sweetcorn
Peppers - any you like - I used a mixture of red, yellow and green
Prawns
Noodles
Sweet and sour sauce - or of course you could make your own if you like!

1) chop up all your vegetables - I like to cut up my courgettes as thinly as possible so that they soften quickly - and although this looks like a lot of vege for just one portion - they do wilt down - and I always say that it's better to fill up on the vegies.

2) cook your veggies - so next up you want to add your vegetables to a large frying pan or wock, after adding a small amount of olive oil to the pan. I added the courgette first and then the peppers.

Then I added the frozen sweetcorn after a few minutes when the courgette and peppers had started to soften - the sweetcorn took much less time to soften and heat up.

3) Add your prawns: Then it was time to add the prawns to the pan and let them heat through - I added them at this stage because I had already let my prawns fully defrost therefore it didn't take long for them to cook through. The time they take can vary - but just ensure they're hot all the way through and you're sorted!

4) Adding sauce and cooking the noodles: next it's time to add the sauce to your pan, and also put your noodles on. These noodles only took 4 minutes to cook in boiling water, so I thought it was perfectly timed to put them on whilst I let the sauce warm in the pan with my veggies and prawns. This is just a standard sweet and sour sauce, and obviously if you have the time and know how to make your own! But I wanted to be realistic here for a quick student meal. I only needed just under half of the sauce, because I was just cooking for myself and I find too much rather sickly.

The finished meal: quick, easy and yummy!

I hope that you enjoyed this post! I really enjoyed putting together this quick recipe, and I'm wanting to put together more soon.

Speak to you soon, Shelley x
